Arugula, Pear, and Blue Cheese Salad

Ingredients
  • 5 ounces baby arugula
  • 1 tablespoon extra virgin olive oil
  • 1 pinch salt
  • freshly ground black pepper
  • 1/2 large pear (or 1 small) (very thinly sliced)
  • juice of half a lemon
  • 1/3 cup glazed walnuts
  • 1/3 cup blue cheese (crumbled)
Instructions
  1. Toss the arugula with the olive oil, pinch of salt, and pepper.
  2. Add the sliced pear and squeeze of lemon juice; toss.
  3. Mix in the blue cheese and walnuts.
    This salad is also good with goat cheese.
